According to every pie survey ever taken, apple pie is America’s favorite pie. Ok, so I didn’t actually go through every pie survey ever taken, but I did look at quite a few – and the trend was pretty clear – apple is a definite crowd pleaser. While there has been a shift in America’s pie consumption over the last few years, (people seem to be more willing to explore new flavors) apple pie still manages to come out on top. A good apple pie recipe is a great thing to have on hand. This recipe has the buttery crust and sweet cinnamon filling of a classic apple pie, but has the added bonus of a crumb topping. Everyone agrees, crumble can only make something better. Enjoy.
Apple Crumb Pie
- 2 cups flour
- 1 tsp salt
- 1 tsp sugar
- 2/3 cup + 1 tbs cold shortening
- 3 tbs cold water
- 3 tbs cold milk
- 5 cups peeled and chopped apples
- 1/2 cup granulated sugar
- 2 tbs corn starch
- 1/2 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/2 cup all purpose flour
- 1/2 cup packed light brown sugar
- 1/3 cup rolled oats
- 1/2 tsp ground cinnamon
- pinch of salt
- 5 tbs unsalted butter, melted
1. Preheat the oven to 375 degrees
for the crust:
- Combine flour, salt and sugar with a light whisk.
- Add the shortening. With a dough blender or your hands, work the shortening into the dry ingredients until it is pea-size pieces.
- Add cold water and milk 1 tablespoon at a time, tossing with fork until all flour is moistened and the dough comes together.
- Gather dough into a ball and then shape it into a flattened round on a floured surface.
- Roll pie crust into a circle 2 inches larger than the upside down pie plate.
- Fold crust into fourths and place into pie plate. Unfold and ease into plate.
- Using kitchen shears, trim dough to a 1-inch overhang and create desired decorative edge (see video)
- Once you have finished the crust, use a fork to poke a few holes into the bottom.
- Use the back of the fork to press the edges of the crust up against the side of the pie plate. (See image below)
Now, there are a few techniques you can use to get your crust to look pretty in the pie plate. Instead of explaining them to you, I have given you this video. It is a quick and easy demonstration.
for the filling and topping:
- Peel and chop apples into 1" bite size pieces.
- Put apples in a medium bowl and refrigerate until ready to use.
- Combine granulated sugar, corn starch, cinnamon, and ginger in a mixing bowl, and stir.
- Add the sugar mixture to the apples and toss until they are all evenly coated. Set bowl in the refrigerator while you make the crumble mixture.
- In a medium bowl, place flour, brown sugar, oats, and cinnamon - mix until combined.
- Add melted butter, a little at a time, and mix until the mixture has a crumbly texture.
- Put apples into the prepared pie crust making sure to drain any excess liquid from the apple bowl beforehand.
- Place crumble on top of apple mixture and pat down to pack in apples. Make sure the crumble goes all the way to the crust and is covering all the apples.
- Place pie plate on a standard cookie sheet and bake for 50-65 minutes or until the crust has turned golden brown and the juice from the apple filling begins to bubble.
- Place pie on wire rack to cool.
