MIssissippi Mud Cake

I love when chef’s use classic recipes as inspiration for something bigger and better. For example, this Mississippi Mud Cake is inspired by the flavors and makeup of a traditional Mississippi Mud Pie. A super moist chocolatey cake, a decadent chocolate frosting, and gooey melted marshmallows. If you like chocolate – this is a good recipe for you.

Mississippi Mud Cake

Cake

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup unsalted butter
  • 1/3 cup cocoa powder
  • 1 cup water
  • 1/2 cup buttermilk
  • 2 eggs, lightly beaten
  • 1 tsp. vanilla
  • 8 ounces mini marshmallows

Frosting

  • 1/2 cup unsalted butter
  • 1/3 cup cocoa powder
  • 1/2 cup buttermilk
  • 3 2/3 cups confectioners’ sugar
  • 1 tsp. vanilla extract
  • Pinch salt

Directions

for the cake:

  1. Preheat the oven to 350 degrees F and lightly grease a 9 by 13-inch cake pan.
  2. In a medium bowl, lightly whisk flour, sugar, baking soda and salt. Set aside.
  3. In a small saucepan, melt butter over medium heat. When melted, add the cocoa and water and bring to a boil. Add the boiling cocoa mixture to the dry ingredients and stir until just combined.
  4. Add the buttermilk, eggs, and vanilla and stir until smooth.
  5. Pour into the prepared baking dish and bake until a toothpick inserted in the center of the cake comes out clean, 35 to 40 minutes.
  6. Transfer to a wire cooling rack and sprinkle the marshmallows evenly over the hot cake.

for the frosting:

  1. In a medium saucepan, melt butter over medium heat. When melted, add the cocoa powder and buttermilk and bring to a boil.
  2. Remove from the heat and add the confectioners’ sugar, vanilla, and salt and stir until very smooth. Pour the hot icing over the marshmallows on the hot cake.
  3. Let cool to lukewarm before serving. Cake is best served warm or at room temperature.
