It’s like having cake for breakfast – but nobody can judge you for it.

You can have it over yogurt, or in your smoothie bowl – or you can just do what I do and eat it by the handful as a snack. 

What makes this Birthday Cake Granola so amazing?

  • Granola is always a good idea
  • It is super easy to make
  • There are sprinkles involved (and you know how I feel about sprinkles)
  • There are huge chunks of my Milk Bar inspired Birthday Cake Crumbles 
  • It is the perfect way to celebrate a birthday before the day gets started 
  • But it is also good any time of day

The other great thing about granola is that you can make it ahead of time and it stays good for weeks! Here are my suggestions for storage: 

Two ways to store your granola:

  1. Keep your granola in an airtight container at room temperature for 2 weeks. I store mine in a mason jar. 
  2. Place your granola in a plastic bag (with all the extra air let out) and keep it in your freezer. It can last up to 3 months like this!

Back to the granola. As I said, you can definitely eat this granola with yogurt or a smoothie bowl for breakfast – but personally, I have been eating it as a snack. And by snack, I mean I have been eating it by the handful every hour for the last few days. It’s kind of addicting. I can’t wait for you to try it. 

BIRTHDAY CAKE GRANOLA

Ingredients
  

GRANOLA

  • 2 1/2 cups old fashioned oats
  • 3/4 teaspoon ground cinnamon
  • 2 1/2 cups old fashioned oats
  • 3/4 teaspoon ground cinnamon
  • 1/2 cup pure maple syrup
  • 1/4 cup canola oil
  • 2 tablespoons imitation vanilla extract
  • 3 tablespoons sprinkles

BIRTHDAY CAKE CRUMBLE

  • 3/4 tablespoon brown sugar
  • 1/4 cup + 2 tablespoons cake flour
  • 1/4 cup sugar
  • 3/4 tablespoon brown sugar
  • 1/4 cup + 2 tablespoons cake flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons canola oil
  • 1/2 tablespoon imitation vanilla extract
  • 1 tablespoon of sprinkles

Instructions
 

FOR THE CRUMBLE

  • Prepare a baking sheet with parchment paper, and preheat the oven to 350 degrees.
  • In a stand mixer fitted with a paddle attachment, combine sugars, cake flour, baking powder, salt and sprinkles on low speed.
  • Stream in oil and imitation vanilla and turn the mixer to medium/high speed.
  • Let the mixer run until the mixture turns into small clusters (about 2 minutes).
  • Spread the mixture evenly on prepared baking sheet and bake for 10 minutes.
  • Let the mixture cool for 8-10 minutes and then break the baked crumble into smaller pieces.

FOR THE GRANOLA

  • Prepare a baking sheet with parchment paper and preheat the oven to 325 degrees.
  • In a large bowl, combine oats and cinnamon and set sprinkles aside.
  • Add maple syrup, oil, and imitation vanilla extract to the oat mixture. Mix until the oats are fully coated.
  • Spread mixture evenly onto baking sheet and bake for 30- 35 minutes, stirring halfway through.
  • Take granola out and set on a cooling rack until completely cool.
  • Once it is cool, add sprinkles and birthday cake crumble.
