When I was a kid, it was hard for me to understand why some people did not like birthday cake. In my eyes, it was the closest you could get to serving happiness on a plate. Delicious cake, sugary frosting and bright colored candles – what was there not to like?
To this day, it is still one of my favorite foods. But as I have gotten older, I have grown to accept that people have different tastes – and some of those tastes do not like birthday cake.
However, that doesn’t mean the cake haters of the world should be subject to a cakeless birthday celebration. (That’s kind of the best part of a birthday, right?) It just means we have to find them a different kind of cake. There are a lot of options – cheesecake, ice cream cake, molten chocolate cake – or last week I even made an entire cake out of Rice Kirspy Treats.
Or, if breakfast is more your thing, you can always go with this Confetti Waffle Birthday Cake. Stacks of delicious confetti waffles, smothered with what some may find aggressive amounts of whipped cream, and of course, lots and lots of sprinkles. It’s pretty top notch in terms of breakfast, and not too shabby in terms of birthday cake. And even though I hate to admit it, this pretty stack of waffles may just bring me as much happiness as a good old fashioned slice birthday cake.

THE BEST CONFETTI WAFFLE BIRTHDAY CAKE
Ingredients
WAFFLES
- 2eggs
- 2 cups flour
- 1 3/4 cup milk
- 1/2 cup vegetable oil
- 1 tablespoon sugar
- 1 tablespoon + 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon imitation vanilla
- 1/3 cup sprinkles
WHIPPED CREAM
- 2 cups heavy whipping cream
- 2 tablespoons powdered sugar
ICING
- 1 cup powdered sugar
- 1 1/2 teaspoons milk
- 1 teaspoon imitation vanilla
- Pink food coloring
- Sprinkles
Instructions
For the waffles:
- Preheat waffle iron.
- In a mixer fitted with a whisk attachment, beat eggs until light and fluffy.
- Add oil, flour, milk, oil, sugar, baking powder salt and vanilla. Mix until smooth.
- Fold in sprinkles.
- Spray waffle iron with non-stick spray and pour batter onto the iron. Cook until the waffle is golden brown.
For the whipped cream:
- In a stand mixer fitted with a whisk attachment, beat heavy cream and powdered sugar on high speed until it becomes thick.
For the icing:
- In a medium bowl whisk powdered sugar, milk and vanilla until smooth.
- Add a few drops of pink food coloring and mix until you get desired color.
- With a spoon, drizzle icing over waffles and top with a generous handful of sprinkles.
