In case you were not aware, we are coming up on one of my favorite holidays – National Snack Day. Some people call it the Super Bowl, but I prefer NSD because let’s face it…Super Bowl parties are just an excuse to eat an inappropriate amount of snacks and not feel guilty about it. It’s a great friggin’ day!

And if you have been itching to show off your new baking skills, or just really want an excuse to bake, this is a great opportunity to do it! And what better way than a Game Day Rice Krispy Cake?!

If you’re not convinced yet, let me give you a few more reasons as to why this is a VERY VERY good idea…

1. There is a mini football made from an almond. It doesn’t get much cuter than that.

2. Everyone likes Rice Krispy Treats (if they don’t they are a monster).

3. It is totally Gluten Free for all of your annoying friends.

4. There are a LOT of sprinkles involved šŸ™‚

5. All your friends and family will be super impressed with your skills.

And a few quick tips on how to make this the best it can be. First, start with the sprinkle section first. I did it the other way around and it was a mistake. Second, have a cup of hot water on hand while decorating. One you have spread out the green icing, dip the spatula or knife into the hot water and smooth out the green icing. The hot tool will give you that super smooth look. Third, use a ruler to get those super straight lines. But DO NOT place the ruler all the way down onto the green icing. You will ruin all the smoothing you just did. I laid one end of the ruler on the sprinkles, and the other end on the edge of the opposite side of the pan. Use the ruler as your guide!

GAME DAY RICE KRISPY TREATS

Ingredients
  

RICE KRISPY TREATS

  • 8 cups Crisped Rice Cereal
  • 24 oz Mini Marshmallows
  • 3 tablespoons butter
  • 1 teaspoon vanilla extract

TOPPING

  • 1 lb powdered sugar
  • 1/2 cup butter, room temperature
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract
  • Green food coloring
  • 1 almond
  • Sprinkles

Instructions
 

RICE KRISPY TREATS

  • Prepare a 9x13 pan with non-stick cooing spray.
  • In a large pot, melt butter and mini marshmallows on medium heat. Make sure you stir every 15-30 seconds until the two ingredients are combined.
  • Mix in vanilla.
  • Add in crisped rice cereal and mix until everything is coated in the marshmallow mixture. Pour mixture into prepared pan and press mixture down until it is one even layer.
  • Place in the refrigerator for at least 30 minutes.

TOPPING

  • In a mixer fitted with a whisk attachment, combine butter, powdered sugar, milk and vanilla.
  • Start on a slow speed. Once everything is combined, turn in on medium/high for 3-5 minutes or until it is light and fluffy.
  • Remove 1/3 of the icing and place in a separate bowl.
  • Add a few drops of green food coloring and place the bowl back on the mixer. Mix on low speed, and add more green food coloring if needed.
  • Cut a piece of parchment or wax paper 6" wide by 13" long.
  • Prepare a piping bag fitted with a small round tip. I used Wilton #3
  • Remove 3 -4 tablespoons of white icing and place it in the prepared piping bag.
  • Take out the krispy treats and place parchment in the center where your green section will be. If it is not sticking, use a little green icing on the corners to make it stick.
  • Use the remaining white icing to frost the sides of the krispy treat that is showing. This will be your stands.
  • Use a spoon to add sprinkles. Use the back of the spoon to press down the sprinkles into the icing.
  • Now you need to remove the extra sprinkles. Over a sink or baking sheet, place one hand on a 9" side of the pan and then other on the parchment paper in the middle of the treats. Carefully, using the hand that is on the 9" side, tip the pan up so the extra sprinkles all fall towards the other 9" side and eventually out of the pan.
  • Remove the parchment and ice the middle green. (See the tips in the post to make it super smooth)
  • Place the ruler on the sprinkles and mark the middle of the field and where your other lines will be. I did mine 2" apart.
  • Pipe your lines and numbers on the field. (See the tips in the post how to make your lines straight)
  • Take the almond and pipe one long horizontal line and three small vertical lines.
  • Place almond in the middle of the field.
