Happy November everyone! I hope you all had a great Halloween yesterday! I also hope that everyone ate an inappropriate amount of candy – I know I did. But if you didn’t finish off your candy last night, and are trying to find something to do with it – I have the perfect recipe for you today!

Leftover Candy Cookie Pie is the best way to put that extra candy to use! My mom used to make this classic chocolate chip cookie pie all the time when I was younger. It was actually one of the few things she baked (she wasn’t much of a baker). So I took her original recipe and updated it for Halloween!

Quick and Easy way to Use Candy in Cooking

It’s kind of a Halloween version of an Everything But The Kitchen Sink cookie. You can really throw almost anything in there and it works (I would avoid gummy like candies). The cookie is super soft and gooey and the candy just adds a little extra crunch and flavor in there!

LEFTOVER HALLOWEEN CANDY COOKIE PIE

Ingredients
  

  • 1 cup + 2 tablespoons flour
  • 1/4 teaspoon baking soda
  • 1/2 cup unsalted butter, room temperature
  • 1/4 cup sugar
  • 1/2 cup brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 cup mini chocolate chips
  • 1 cup leftover candy, chopped

Instructions
 

  • Preheat the oven to 350 degrees and prepare a 8" cake pan with non-stick cooking spray and parchment paper.
  • In a stand mixer fitted with a paddle attachment, combine butter and sugar until light and fluffy.
  • Add eggs, vanilla extract and salt. Beat until well mixed.
  • Add flour, baking soda and mix until just combined.
  • Stir in chocolate chips and candy pieces.
  • Put dough into cake pan and use an offset spatula to smooth the dough and make it even.
  • Bake for 25 - 30 minutes.
  • Set on a wire rack to cool.
