When I was younger, I decided to stop drinking soda. I was an athlete (sometimes I like to pretend I still am) and I didn't like the idea of ingesting all those chemicals and sugar. So for a long time, I avoided any type of soda.

As I got older, I realized that not ALL soda was bad - it was just a matter of picking the right brands. These days, my favorite is Zevia. They have a ton of delicious flavors (think Cream Soda, Ginger Ale and Grapefruit Citrus) AND they are sugar free, GMO free, and made with no artificial sweeteners! How amazing is that?!

So when Zevia asked me to make a recipe using their Lemon-Lime Twist Soda, I was so excited! Together, we came up with this all natural, no sugar added, Lemon-Lime Soda Pound Cake! I also decided to make them mini because let's be honest...everything is cuter in mini form.

Basically, these mini pound cakes are the PERFECT guilt free snack! And because they are sugar free, you can probably get away with eating two...or three.

Lemon-Lime Soda Pound Cake

Lemon-Lime Soda Pound Cake | Sprinkles For Breakfast


Pound Cakes

  • Mini Loaf Pans
  • 3 sticks unsalted butter, room temperature
  • 2 1/2 cup Stevia All Natural Sweetener
  • 5 eggs
  • 3 cups flour
  • 1 teaspoon baking powder
  • 1/2 cup Zevia Lemon-Lime Soda
  • 2 tablespoons lemon juice
  • 2 teaspoons lemon zest
  • 1 teaspoon lime zest

Lemon-lime Glaze

  • 3/4 cup Greek yogurt
  • 1 1/2 tablespoon Stevia All Natural Sweetener
  • 3 tablespoons Zevia Lemon-Lime Soda


for the pound cakes:

  1. Preheat the oven to 350 degrees and prepare a baking sheet.

  2. In a mixer fitted with a paddle attachment, mix butter on high speed until light a fluffy.

  3. Add Stevia and mix on high speed for 5 minutes.

  4. Lower the speed and add eggs. Mix for 1 minute.

  5. Add flour and baking powder. Mix until just combined.

  6. Add Zevia Lemon-Lime Soda and lemon juice. Mix until just combined.

  7. Stir in lemon and lime zest.

  8. Fill mini loaf pans and bake 16-18 minutes.

  9. Place on wire rack to cool.

for the glaze:

  1. In a small bowl, combine Greek yogurt, Stevia Sweetener and Zevia Lemon-Line Soda. Mix until combined.

  2. Place glaze in piping bag and cut a small hole at the end. Drizzle over cooled pound cakes.
