You know those people who buy a one-way ticket to a foreign country without any plan and just figure it out as they go? Yeah, I am not one of those people. I am more the full itinerary with planned tours, restaurant reservations, and a list of suggested places to shop kind of person. Basically, I am a low key control freak.

Okay…maybe not so low key.

Throughout life I have found there are a lot of advantages to having a control freak personality, but I have also found that dealing with change is not one of them. It’s actually kind of my worst nightmare. And as I am about to embark on a whole lot of change in the next few months, I am trying to remind myself that sometimes, change is good.

Without change we walk through this life doing the same things over and over again. We become stunted in our own comfort zone prisons, never giving ourselves any opportunity to grow. Without change, it becomes impossible for us to challenge ourselves or know what we are really capable of. And if you ask me, that’s kind of sad.

So I would argue that even though change can be terrifying, it can also be kind of necessary to living a happy life.

So, to celebrate change, I made these Magical Lucky Charm Bars. This year Lucky Charms introduced the Unicorn Marshmallow – the first new marshmallow in 10 years! And because we all know the marshmallows are the best part of the cereal, I think this is an amazing upgrade.

They are kind of like Rice Krispy Treats, except better because of the previously mentioned marshmallows. They are an easy to make, no bake treat, and they have a pretty epic rainbow topping. So if you are a Rice Krispy Treat purist, I urge you to switch it up and try something new!

MAGICAL RAINBOW BARS

Ingredients
  

MAGICAL RAINBOW BARS

  • 5 cups Lucky Charms Cereal
  • 3 cups crisped rice cereal
  • 20 oz mini marshmallows
  • 3 tablespoons butter
  • 1 teaspoon vanilla extract

RAINBOW FROSTING

  • 1 lb powdered sugar
  • 1/2 cup butter, room temperature
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract
  • Food coloring
  • Sprinkles

Instructions
 

MAGICAL RAINBOW BARS

  • Prepare a 9x13 pan with non-stick cooing spray.
  • In a large pot, melt butter and mini marshmallows on medium heat. Make sure you stir every 15-30 seconds until the two ingredients are combined.
  • Mix in vanilla.
  • Add in Lucky Charms and crisped rice cereal and mix until everything is coated in the marshmallow mixture. Pour mixture into prepared pan and press mixture down until it is one even layer.
  • Place in the refrigerator for at least 30 minutes.

RAINBOW TOPPING

  • In a mixer fitted with a whisk attachment, combine butter, powdered sugar, milk and vanilla.
  • Start on a slow speed. Once everything is combined, turn in on medium/high for 3-5 minutes or until it is light and fluffy.
  • Divide the icing into 5 separate bowls.
  • Add a different color food coloring to each bowl. Mix until you get desired color.
  • Place each color in a separate piping bag and cut off the tips.
  • Pipe a straight line of each color across the width of the pan. Repeat until you reach the end of the pan. Make sure there is a little bit of each color left at the end.
  • Take a bench scraper or offset spatula and smooth out the frosting. Make sure you wipe the tool clean each time.
  • Pipe extra frosting in any blank patches and repeat the smoothing.
  • Add sprinkles.

My favorite cookies of all time just got an upgrade with our new @sweetsindeed toping sugar!

Here is the recipe:

BROWN SUGAR COOKIES
2 1/2 cups all purpose flour
1 teaspoon baking soda
2 teaspoons cream of tartar
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 cup unsalted butter, browned
1 1/4 cups brown sugar
1/2 cup sugar
1 egg and 1 egg yolk
1 teaspoon plain greek yogurt
1 teaspoon vanilla extract
Topping - @sweetsindeed Brown Sugar Cinnamon Toping Sugar

Bake at 350 for 8-11 minutes.
