Halloween is my favorite holiday. No questions asked. So I obviously like to have some fun when it comes to making Halloween desserts. And let me tell you, these monster truffles (or as my roommate likes to call them…MONSTER BALLZ) are a LOT of fun – and only 5 ingredients! The inside of these truffles are filled with the smoothest peanut butter truffle mix. It literally melts in your mouth like some kind of heaven. I personally like them smooth, but if you want to add a little more texture, you can always add mini chocolate chips to the mix. Either way works!
And then comes the best part…the decorating. It turns out there are a lot of sprinkles out there that are GREAT for creating scary monster truffles. You just have a little bit of an imagination. My favorite sprinkle monster discovery was the heart sprinkles. If you turn the heart upside down into the truffle, the pointed side becomes a super adorable ear!
But whatever design you decide on, just make sure you get your sprinkles on there before the white chocolate dries. The melted chocolate acts as the glue, so as soon as it dries, you are going to have a hard time adding anything without having to add more chocolate. I also found using tweezers like these were helpful for placing a lot of the sprinkles.
WHAT’S THE BEST MELTING CHOCOLATE?
I have found that Merckens Melting Chocolate is the best when it comes to melting chocolate. It melts nicely and gives the truffles a nice smooth finish. Guittard Melting Chocolate works wells too. If you are going to go with the Wilton Candy Melts, you might have a little bit of a hard time getting a smooth finish. Sometimes the melted Wilton chocolate is chunky and it is very difficult to dip the truffles without making a mess. If you do decide to use Wilton, make sure you have some of these handy Paramount Crystals to help thin out the melted chocolate. And if you want to color the chocolate, make SURE you use candy coloring and not regular food coloring.

MONSTER TRUFFLES
Ingredients
MONSTER TRUFFLES
- 1-1/2 cup creamy peanut butter
- 1/2 cup unsalted butter, room temperature
- 2 teaspoons vanilla extract
- 3 cups powered sugar, sifted
- 12 oz white melting chocolate
- Candy coloring
- Candy Eyes
- Sprinkles
Instructions
- Line a baking sheet with parchment and set aside.
- With an electric mixer, mix peanut butter, butter and vanilla extract until light and smooth.
- Add powdered sugar one cup at a time mixing thoroughly after each addition.
- Take about a tablespoon and a half of dough and make it into a round ball. Place on prepared baking sheet.
- Repeat with the remaining dough.
- Once all balls are formed, place them in the fridge for at least one hour.
- Melt melting chocolate and divide into three separate bowls.
- Color each portion desired color.
- Prepare a separate baking sheet or plate with parchment. This will be where you decorate your monsters.
- Take balls out of the fridge. Place a ball on a fork and use a spoon to cover the ball with melted chocolate.
- Once the ball is coated, tap the fork on the edge of the bowl to remove excess chocolate.
- Place coated ball new parchment sheet and use sprinkles to decorate as desired.
- Set aside until chocolate is dry.
