PEPPERMINT OREO ICE CREAM

Ingredients
  

  • 1 can (14 oz.) sweetened condensed milk
  • 1 tablespoon pure vanilla extract
  • 3/4 teaspoon peppermint extract
  • 2 cups cold heavy cream
  • 1 cup Oreo, roughly chopped
  • 1/2 cup candy canes, crushed
  • Pink food coloring
  • 1 Loaf Pan

Instructions
 

  • On a cutting board, roughly chop cookies. Set aside.
  • In a plastic bag, crush candy canes. Set aside.
  • In a medium bowl, mix condensed milk, vanilla extract, and peppermint extract.
  • In a stand mixer with a whisk attachment, beat the heavy cream on a high speed until stiff peaks form.
  • Add a few drops of food coloring. Mix until the entire mixture is pink.
  • Fold whipped cream into condensed milk mixture.
  • Once the whipped cream is fully incorporated, stir in cookies and candy canes.
  • Line a 4 1/2 x 8/12 inch loaf pan with parchment.
  • Pour mixture into pan. (You can crush a few more cookies and candy canes on top)
  • Place loaf pan into the freezer overnight, or until firm.
