THE BEST CONFETTI WAFFLE BIRTHDAY CAKE

Ingredients
  

WAFFLES

  • 2eggs
  • 2 cups flour
  • 1 3/4 cup milk
  • 1/2 cup vegetable oil
  • 1 tablespoon sugar
  • 1 tablespoon + 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon imitation vanilla
  • 1/3 cup sprinkles

WHIPPED CREAM

  • 2 cups heavy whipping cream
  • 2 tablespoons powdered sugar

ICING

  • 1 cup powdered sugar
  • 1 1/2 teaspoons milk
  • 1 teaspoon imitation vanilla
  • Pink food coloring
  • Sprinkles

Instructions
 

For the waffles:

  • Preheat waffle iron.
  • In a mixer fitted with a whisk attachment, beat eggs until light and fluffy.
  • Add oil, flour, milk, oil, sugar, baking powder salt and vanilla. Mix until smooth.
  • Fold in sprinkles.
  • Spray waffle iron with non-stick spray and pour batter onto the iron. Cook until the waffle is golden brown.

For the whipped cream:

  • In a stand mixer fitted with a whisk attachment, beat heavy cream and powdered sugar on high speed until it becomes thick.

For the icing:

  • In a medium bowl whisk powdered sugar, milk and vanilla until smooth.
  • Add a few drops of pink food coloring and mix until you get desired color.
  • With a spoon, drizzle icing over waffles and top with a generous handful of sprinkles.

*recipe makes 2 Waffle Cakes
*6-10 waffles (depending on your waffle iron size)
