THE BEST CONFETTI WAFFLE BIRTHDAY CAKE

Ingredients
WAFFLES
2eggs
2 cups flour
1 3/4 cup milk
1/2 cup vegetable oil
1 tablespoon sugar
1 tablespoon + 1 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon imitation vanilla
1/3 cup sprinkles
WHIPPED CREAM
2 cups heavy whipping cream
2 tablespoons powdered sugar
ICING
1 cup powdered sugar
1 1/2 teaspoons milk
1 teaspoon imitation vanilla
Pink food coloring
Sprinkles

Instructions
For the waffles:
Preheat waffle iron.
In a mixer fitted with a whisk attachment, beat eggs until light and fluffy.
Add oil, flour, milk, oil, sugar, baking powder salt and vanilla. Mix until smooth.
Fold in sprinkles.
Spray waffle iron with non-stick spray and pour batter onto the iron. Cook until the waffle is golden brown.
For the whipped cream:
In a stand mixer fitted with a whisk attachment, beat heavy cream and powdered sugar on high speed until it becomes thick.
For the icing:
In a medium bowl whisk powdered sugar, milk and vanilla until smooth.
Add a few drops of pink food coloring and mix until you get desired color.
With a spoon, drizzle icing over waffles and top with a generous handful of sprinkles.

*recipe makes 2 Waffle Cakes
*6-10 waffles (depending on your waffle iron size)
