Using a knife or fork, divide the Oreo in half so the cream is on one side.
Scoop about 1 tablespoon of ice cream into the center of the Oreo.
Sandwich the Oreo and place back in the freezer for 1-2 hours, or until firm.
In a small deep microwave safe bowl (deep enough to dunk half the Oreo in), melt blue chocolate in 30 second increments.
Place Patriotic sprinkles in a small shallow bowl.
Only taking 1 Oreo out of the freezer at a time, use a knife to smooth the sides of the ice cream.
Either dip the rim of the ice cream into the sprinkles or dip half the Oreo into the chocolate and place it on parchment paper and add sprinkles.
Place Oreo back into the freezer.
Let Oreos sit another 30 minutes, or until firm, before serving.
