When you are having a bad day, this colorful and delicious White Chocolate Sprinkles Fudge is sure to make you feel better. I should know. Last week I got let go from a job I have had for a year. Then, two hours later a man LITERALLY fell through my roof.
Apparently, when it rains, it pours. Or in my case, dumps 20 years of dust onto your living room floor. Luckily, everyone is fine and my ceiling is almost back to normal. But over the years I have learned that days like these happen. There is no way of stopping the curveballs life throws at us. The only thing we can control is our reaction to these epically crappy days.
We have two choices. We can either pout and get upset and let these things bring us down, or we can accept them and move forward. Or I guess the third option is to make this White Chocolate Sprinkle Fudge like I did.
If you are feeling lazy, you can combine the layers and just make one color! Or try dividing them in half and making 4 colors. Go wild with it!
WHITE CHOCOLATE SPRINKLE FUDGE
Ingredients
PINK LAYER
- 12 oz. white chocolate
- 1/4 cup heavy cream
- 1/2 teaspoon imitation vanilla extract
- Pink food coloring
BLUE LAYER
- 12 oz. white chocolate
- 1/4 cup heavy cream
- 1/2 teaspoon imitation vanilla extract
- Blue food coloring
TOPPING
- Candyfetti

Instructions
- Prepare a 8x8 inch pan with parchment paper.
- Place white chocolate, heavy cream and imitation vanilla extract in a microwave safe bowl. Microwave in 30 second intervals until smooth.
- Add pink food coloring.
- Pour into prepared pan. Smooth with a knife.
- Place in the fridge for at least an hour.
- Make blue fudge the same way.
- Pour over chilled pink fudge. Smooth with a knife
- Sprinkle on the Candyfetti and lightly press into the fudge.
- Let set in the fridge for two hours before cutting into squares.
- Serve at room temperature.
